PW’s Ranch Style Chicken {Recipe}

Since Aaron is no longer working swing shift, he is gone during the day and home for dinners. So I have been looking for more recipes so I can actually cook full meals. No more half meals or easy things for Aaron to throw in the microwave.
I love Pioneer Women, I adore her, she really is awesome sauce. If you don’t know who she is or haven’t tried any of her recipes please do, you will be thrilled you did. Every recipe I have made of hers has turned out amazing, and has been very easy to make. Friday night I made her Ranch style chicken with baked potatos. It was amazing! Chicken, Bacon, Cheese! What more could you ask for? Total YUM!
Here is the recipe. PW has a step by step with photos if you need them!
½ cups Dijon Mustard
½ cups Honey
½ whole (juice Of) Lemon
½ teaspoons Paprika
½ teaspoons Salt
Crushed Red Pepper (optional To Taste)
6 whole Boneless, Skinless Chicken Breasts
1 pound Thick Cut Bacon
Bacon Grease
Sharp Cheddar Cheese, to taste
Canola Oil
Preparation Instructions
To begin, make the marinade. In a large bowl mix together ½ cup Dijon or country/grainy mustard with ½ cup honey, juice of ½ lemon, ½ teaspoon paprika, and ½ teaspoon salt and whisk until smooth. Sprinkle in some crushed red pepper flakes or cayenne if you like things a little spicy. Set aside.

Next, rinse the chicken breasts, place between two sheets of waxed paper and pound to around ½ to ¾ inch thick with a mallet. Next, add the chicken to the bowl with the marinade, cover with plastic wrap and place in the refrigerator for 1 to 3 hours.

While the chicken marinates, fry up some bacon. When finished cooking, reserve ¼ cup of the bacon grease and clean out the skillet.

When the chicken is done marinating, preheat the oven to 400 degrees. Remove the chicken from the fridge and pour off excess marinade. Heat half of the reserved bacon grease with an equal quantity of Canola Oil in the clean skillet over medium-high heat. When the grease is nice and hot add two or three pieces of chicken to it. Cook until brownish/blackish, about 1 to 1 ½ minutes per side. Remove chicken to a large baking sheet. If cooking many pieces of chicken, repeat skillet process and remove finished chicken to baking sheet. Place chicken in preheated oven and cook for about 10 minutes. Remove from over.

Lay a few pieces of bacon over each chicken breast. Sprinkle shredded sharp cheddar cheese over the top of the chicken as generously as you like. Return pan to oven for an additional five minutes until cheese is melted and bacon is sizzling. Serve immediately.

Ezra looks adorable in his new bright blue small town shirt. It is so soft and great quality. I love the colors and print, so boy but not too dark or the same old colors you usually find with boy clothing. Also his Moccasins are awesome. He kept them on all day and they kept his feet so nice and toasty. He also could walk really well on the hardwood without slipping, like he normally does in socks.
All in all we love our clothing from Vyssan Lull and plan to order and work with Johanna in the future. We love the bright colors, the styles,the comfort and the great personal customer service. Definitley what we look for in a clothing store. Thanks Johanna for being so great to work with.

{Feature} Baby Cakes

SouthernBabyCakes is a new shop on Etsy, that creates handmade Cakeballs. Shop Owners Luanne and Rachel are a mother-daughter team from Texas. The duo specializes in gourmet cakeballs using only the best quality ingredients such as Callebaut Belgian chocolate, Madagascar vanilla and Vietnamese cinnamon.
Luanne and Rachel have been making cakeballs for years as gifts and treats for family. Throughout the years they became very popular and highly requested at all family events.

In 2009 Rachel graduated from college and went to work for her parents company after not being able to find anything more permanent. This is when Rachel convinced her mother that they should start their own business. Selling their amazing cakeballs, which they experimented with. Trying other cakeballs from specialty bakeries and using their friends and family as taste testers, they threw away a lot of cakes until they came up with their current method now. Which I must say is fantastic and I really can’t say enough about how tasty, delicious and beautiful their treats are.

Rachel and her mother Luanne are also very different than other bakers, in that they are only bakers at night and work full time in the day. They also make their cakeballs to order and in small batches to assure freshness and quality in taste.

Baby Cakes sent me a dozen of their cakeballs in each flavor they offer. As soon as I opened the package I was pleased, the packaging is adorable and very classy.

Then I opened the box and there they were. 12 beautiful little cake balls. I couldn’t wait to pop one in my mouth and either could Finley. Babycakes says on their etsy site that the cakeballs are good for 2 weeks…Um ours didn’t even last 2 hours barely. Haha.

My favorite cakeball is the Coconut cake. To die for! Seriously a little peice of paradise heaven, no joke.

All of the flavors were wonderful and tasted just like they should. You know when a cake or candy is supposed to have a certain flavor and it either is way too strong, not strong enough or doesn’t even taste close to the flavor it should? Well Babycakes has no problem getting the perfect flavors in there. Everything tasted wonderful and full of just the right flavors. Rachel and Luanne have also been able to accomadate to nut and gluten allergies as well.

For The Home {Anthropologie Edition}

I love home Decor. And now that we have moved into a new house I’m starting to think about how I want to decorate. Our room needs a new look. So I’m going to share with you a few things I found while purusing Anthropologie.

We really need new bedding. I absolutlely fell in love with this Love Letters Bedding.
I love how soft and neautral it is, but I also love that you could pull some darker and brighter colors out of it to bring into the room decor. A mustard yellow shelf and some dark grey picture frames would look fabulous on the walls.

I also adore these sheets. The ruffle gives a girly feminine feel, without making your husband feel like a guest in his own room. (Mine hates floral and feels uncomfortable in any room that is too girly…he is weird)

This Collected Memories Mirror would be the perfect accent in any room. I love the rustic feel of this peice, and it would go perfect with the bedding. (Ignore the price tag)

These Jars are really neat.

I could spend all day and show you a million more wonderful things from Anthropologie. These are just a few ideas of the feel I would like to go for in our room. (Hint Hint Aaron-Valentines day!) Next to come Kitchen finds!

When I came across Maranda’s Etsy shop, Hot Mama Handbags. I knew I wanted to share her shop with my readers. Not only are her diaper bags adorable, but they are functional, well made and don’t look like your average diaper bag.

These are the type of bags I love when we are shopping, something I can fit easily under the stroller but also big enough to keep everything I need for a quick shopping trip.

We are here, in Montana. We arrived last friday. Sorry it has taken me a bit to update. I didn’t have the internet right away. Plus we have all been super sick. I don’t think I have ever been this sick before. Finley is having a rough time getting better and has been asleep on the couch for the past few days all day long. I found us a doctor and we take her in tomorrow morning.
Our house is beautiful. I love it. I really feel at home in it. Once we are all unpacked and I find my camera, I will post photos and give you all a little tour.
Just wanted to check in and let you all know we got here safe and sound.
